Minnows are great baits for brown trout. Bigger brown trout feed a lot on baitfish, so if you can get your hands on some nice-sized shiner minnows, chubs or even small suckers, you can do well with brown trout. The smaller fathead minnows will take plenty of brown trout too, but the average size will definitely run smaller.
